Egg roll in a bowl
Description
Do you love egg rolls? US TOO! However, competition diet doesn’t allow for fried food so we create a dish with all the same flavors but half the calories! This works great for anyone on a keto diet.

Ingredients
- 2 Tbsp Olive Oil
- 1 Lb Ground Turkey
- 1 Large Onion, Diced
- 3 Cloves Garlic, Crushed
- 1 Cup Carrots, Shredded
- 1 tsp Ginger Paste
- 1/4 Cup Chicken Broth
- 1 Bag Shredded Cabbage (or Coleslaw mix)
- 2 Tbsp Soy Sauce
- 2 tsp Rice Wine Vinegar
- Salt and Pepper to Taste
- 1 tsp Sesame Oil
- Toasted Sesame Seeds
- Green Onions, Chopped for Garnish
Cooking Instructions
- In a large pan over medium heat, drizzle the olive oil and add ground turkey. Cook for 5-6 minutes or until thoroughly cooked through.
- Add the onion and garlic with 1 Tbsp oil and sauté for 3-5 more minutes.
- Add the carrots and ginger and stir together. Then pour in the chicken broth and scrape the bottom of the pan to deglaze it.
- Add the cabbage, soy sauce, vinegar, salt, and pepper. Stir well and cover with a lid. Reduce heat to medium-low and cook for 12-15 minutes, or until the cabbage is to your desired tenderness.
- Just before serving add the sesame oil and top with green onions and toasted sesame seeds.

How to serve this dish
HOT! It gets cold pretty quick.
Serve over rice, cauliflower rice, or by itself!
Notes
Think about what sauces you use to dip egg rolls in, that would be great drizzled on top of this meal! (Soy sauce, hoison, sriracha – we used a sriracha mayo in the picture-, sweet and sour sauce, etc)
