Greek nachos

Description

A fun spin on a traditional “Mexican” dish. We used pita instead of corn tortillas, tzatziki instead of cheese sauce, and a whole lot of Greek flavors to bring it all together!

Ingredients
  • 3 Tbsp Olive Oil
  • 8 oz Chicken Thighs, Cut into Bite Size Pieces
  • 1 1/2 tsp Paprika
  • 1 tsp Salt
  • Eight 5-Inch Pita Rounds – Cut into Triangles
  • 1 1/2 Cups Feta Cheese, Crumbled
  • 1 Large Red Bell Pepper, Chopped
  • 1 English Cucumber, Diced
  • 1 Medium Red Onion, Diced
  • 1 Medium Tomato, Diced
  • 3/4 Cup Kalamata Olives, Sliced
  • 3 Tbsp Chives, Thinly Sliced
  • 2 Tbsp Fresh Dill, Chopped
  • 2 Tbsp Fresh Parsley, Chopped
For the Tzatziki Sauce:

– 1 Cup Plain Greek Yogurt
– 1 English Cucumber, Finely Diced
– 2 Garlic Cloves, Pressed
– 3 Tbsp Lemon Juice
– 1 Tbsp Honey
– 1 Tbsp Olive Oil
– 1 Tbsp Fresh Dill, Chopped
– Salt and Pepper to Taste

 

Cooking Instructions
  1. Pre heat the oven to 400 degrees F.
  2. Heat 1 Tbsp olive oil in a large skillet over medium high heat. Season the chicken with salt, pepper, and paprika to taste. Add the chicken to the skillet and cook until fully cooked through. (About 8 minutes).
  3. On a large baking sheet, cover with aluminum foil and spread out each pita triangle(s). Drizzle with remaining olive oil, and season with salt. Bake uncovered until golden brown – about 10-12 minutes.
  4. In the mean time, begin making the tzatziki sauce. Whip together each of the ingredients listed until smooth.
  5. Once the pitas are crisp, top with feta cheese, red pepper, cucumber, onion, tomato, olives, chives, dill, parsley, and your homemade tzatziki sauce.

How to serve this dish

Pita chips on bottom, topped with each ingredient, garnished with fresh herbs.

Notes

We have a seasoning called “Za’atar” that works really well for Greek dishes! You can find it at your local grocery store 🙂

I love making the  tzatziki sauce a few hours ahead of time so it has more time to marinate all the flavors together.

Chickpeas or sun dried tomatoes would be a good substitute/ addition for a topping as well! You can also substitute the chicken for gyro meat.
